Banana egg pancakes with nuts!

 So I have gone paleo! Crazy, huh! Me, of all people, I know, right!!????

I have been posting pictures on my Facebook page of some of the foods I have been trying out but these pancakes are too good not to give them a whole blog post! These are seriously a dessert when it comes to the paleo world! I wish I had know about these a long time ago because they are so delish and they have no sugar and are packed with protein! Perfect breakfast, snack or treat! And did I mention quick, cheap, easy, and you will most likely have all the ingredients on hand!

Banana Egg pancakes

Ingredients:
1 ripe banana
2 eggs
cinnamon (optional)
nuts (optional

Put the peeled banana, eggs and cinnamon in a bowl and mash it really good with a potato masher. I have read that some people put it in a blender, just make sure you don't over do it because you don't want the mixture too thin unless you are going for thin crepe like pancakes. Potato masher or even a fork work just great! Then butter your skillet or pan and I do about 1/4 cup of "batter" per pancake. Add nuts at this stage if you want! I usually cook them 2 minutes or so until they don't look as shiny...


 And then flip!


Wait another minute or two and then flip onto your plate and eat! 


I usually get 6 pancakes out of it. Most of the time I double or triple the recipe because all of my kids like them too!
You can top them just like any other pancake but if you are following a paleo lifestyle you can top them with almond butter and maybe a tiny bit of real maple syrup or honey. But me- I just eat mine plain, they are that good!
