Chocolate Marshmallow Drop Cookies




Chocolate Marshmallow Drop Cookies

--Fran Newbold
1) 2 eggs 6) 3 ½ C flour
2) 1 C shortening 7) 1 t baking soda
3) 2 C sugar 8) 1 t salt
4) 2 t vanilla 9) 1 C cocoa
5) ½ C milk 10) nuts (optional)
about 25 large marshmallows, cut in half
(one bag)
Cream 1-3. Add 4 & 5. Stir together 6-9. Combine wet and dry together. Add 10. Drop on lightly greased cookie sheet. Bake at 350° until almost done (about 6- 7 min). Place halved marshmallows on the center of each cookie. Bake for an additional 2-3 min, WATCH CLOSELY, until puffy and golden brown. Remove from cookie sheet and cool on racks. After they have cooled, frost with chocolate fudge frosting. Makes about  60 cookies using a small cookie scoop.

Chocolate Fudge Frosting

1/3 c butter
1/4 c milk
Melt in the microwave then add
1 tsp vanilla
1/3 c cocoa
Add about 4 C of powdered sugar, start with 3 C and add more as necessary.
Frost immediately.
This frosting will harden when cool, so it is OK to stack on top of each other.
If frosting hardens before you have used it all, add more milk and stir.

  4. Okay, I made these cookies today and yum! They were very good. My husband thinks they need caramel in them, but I like them just how they are. Thanks for the recipe!
